Happy St. Patrick’s Day to all you Irish & Irish-at-Heart out there. In the spirit of all things green & shamrocky, we decided to attempt a healthy “Shamrock Shake” made with our cold-pressed Fuji juice.
Sure, you could jump in your car and head to a well-known, monster fast food chain (that we shall not name) and order a Shamrock Shake from the comfort of your car. But what’s the fun in that? And how many additives, preservatives, and sweeteners are added?
Here’s the honest to goodness truth of what’s in ours:
- ½ cup Red Jacket Orchards Fuji juice
- ½ cup vanilla almond milk
- 1 banana
- 1 cup of fresh spinach
- ½ cup fresh mint
- 2 tablespoons cashew butter
- 4-5 ice cubes
- 1 tsp vanilla extract or seeds of 1 vanilla bean
Blend all ingredients in a high-speed blender until smooth. Add more cashew butter if you want a thicker consistency.
Sweetened only with our juice and a banana, this “Shamrock Shake” is quite a bit different from the drive-thru kind. But, nonetheless, it’s refreshing, it’s minty, it’s satisfying, and it will kick your St. Patty’s Day off to a healthy start. You’re on your own after that.
